Broccoli Cheddar Cups - cooking recipe
Ingredients

7.5 oz. ready bake buttermilk biscuits (10) or make your own
2 c. chopped broccoli, cooked and well drained
5 oz. Cheddar cheese, shredded (tofu or soy)
1 large plum tomato, diced
1/4 c. minced scallion or onion
1 Tbsp. plus 2 tsp. margarine, melted
Preparation

Preheat oven to 400\u00b0.
Spray-grease muffin tins and press biscuits in, one at a time, stretching out into it.
Mix the rest of the ingredients in a bowl and spoon equal amounts into biscuit-lined muffin tin.
Can put water in muffin tins not being used.
Can eat hot or cold after being cooked in 400\u00b0 oven for 10 minutes.
