Corn Relish - cooking recipe
Ingredients

1 small chopped onion
1/2 c. vinegar
1/2 c. sugar
2 Tbsp. celery seed
1/2 tsp. mustard seed
1 can drained, whole kernel corn (use 16 oz. can)
1/4 c. sweet pickle relish
1/4 c. diced pimento
1/2 c. chopped celery
Preparation

In a medium saucepan, combine onion, vinegar, sugar, celery seed and mustard seed.
Bring to a boil.
Reduce heat and simmer for 10 minutes.
In a separate bowl, combine corn, pickle relish, pimento and celery.
Pour hot vinegar mixture over corn mixture and mix well.
Allow to cool.
Chill 24 hours to allow flavors to blend.
The next day, fill small glass jars with mixture.
Share with friends.
Store in refrigerator.
Keeps about 1 month.
