Hearty Hamburger Vegetable Soup - cooking recipe

Ingredients
    2 lbs. hamburger
    2 medium onions chopped
    2 cans beef broth
    1 46-oz. can tomato juice
    2 qt. water
    2 pkg. dry onion soup mix (any brand)
    2 1-lb. pkg. frozen mixed vegetables*
    1-1/2 c. celery coarsely chopped
    2 c. potatoes in bite size pieces
    1/2 c. pearl barley
    1 tsp. salt (or to taste)
    1/4 tsp. pepper (or to taste)
Preparation
    Brown hamburger and onions, drain.
    In large pot (at least 8 quarts) mix all ingredients, except salt and pepper.
    Bring to a boil.
    Reduce heat and simmer 2 to 3 hours.
    Check about 30 minutes before serving and add salt and pepper.
    If soup is to thick add water to desired consistency.
    Soup can be frozen or canned for later use.
