Ingredients

2 c. flour
2 Tbsp. sugar
1 Tbsp. baking powder
1 tsp. salt
1/3 c. oil
1 3/4 c. milk
2 eggs, separated
Preparation

Combine all ingredients, except eggs, in a large bowl. Separate egg whites into a small bowl and use mixer to whip egg whites to fluffy stage.
Combine egg yolks with dry ingredients in large bowl.
Using mixer, beat egg yolks and dry ingredients to a batter; fold egg whites lightly into batter.
Spoon batter into waffle iron and cook.
