Quick Chicken Stir-Fry - cooking recipe

Ingredients
    3 boneless, skinless chicken breasts, cut in strips
    1 garlic clove, minced
    1 c. each: broccoli, cauliflower, red pepper strips and carrot strips
    1/4 c. sliced green onions
    2 Tbsp. fat-free mayonnaise
    2 Tbsp. soy sauce (lite)
    1/2 tsp. ground ginger
    1 can chicken broth (fat removed)
Preparation
    Spray large skillet or wok with a nonstick cooking spray. Add chicken strips and garlic.
    Stir-fry 3 minutes.
    Add vegetables.
    Stir-fry 3 more minutes.
    Add chicken broth.
    Reduce heat to medium.
    Stir in mayonnaise, soy sauce and ginger.
    Simmer until vegetables are tender-crisp.
    Do not overcook.
    (I you want a thick sauce, thicken it with cornstarch and cold water.)
    Serve over hot rice.
