Ingredients

1/2 c. regular rice
1 qt. milk
1 Tbsp. butter or margarine
1/4 tsp. vanilla
1/2 tsp. salt
2 eggs, separated
1 tsp. vanilla
1/4 c. sugar
3/4 c. sugar
1/3 c. coconut (optional)
Preparation

Put rice, milk and butter in a 1 1/2-quart baking dish.
Bake uncovered in 350\u00b0 oven for 1 hour.
Stir occasionally.
Stir in 3/4 cup sugar and salt.
Return to oven; bake about 45 minutes more, stirring several times.
Remove from oven.
Turn oven to 400\u00b0.
