Oven-Fried Eggplant - cooking recipe
Ingredients

1/2 c. nonfat mayonnaise
1 Tbsp. minced onion
12 (1/2-inch) slices unpeeled eggplant (about 1 lb.)
1/3 c. fine dry bread crumbs
1/3 c. grated Parmesan cheese
1/2 tsp. dried Italian seasoning
Preparation

Combine first 2 ingredients. Stir well. Spread evenly over both sides of eggplant slices.
Combine bread crumbs, cheese and Italian seasoning in a shallow bowl. Dredge eggplant in bread crumb mixture.
Place eggplant on a baking sheet sprayed with vegetable cooking spray.
Bake at 425\u00b0 for 12 minutes. Turn eggplant over and bake 12 minutes or until golden. Serves 4.
