Marinated Vegetable Salad - cooking recipe

Ingredients
    4 medium carrots, peeled and sliced
    1 small head cauliflower, broken into flowerets
    2 small zucchini, sliced
    1/4 lb. fresh mushrooms, sliced
    1 c. water
    1/3 c. vinegar
    1 (0.6 oz.) pkg. reduced calorie Italian dressing
    leaf lettuce
Preparation
    Combine first four ingredients in shallow dish.
    Combine 1 cup water, vinegar and dressing mix in a jar; cover tightly and shake vigorously.
    Pour over vegetables, tossing lightly to coat.
    Cover and chill overnight.
    Serve on leaf lettuce.
