Ingredients

3 oz. fresh ginger root, peeled and sliced thin
1/2 c. red wine vinegar
1/2 c. plus 2 Tbsp. sugar
Preparation

Combine all ingredients together in a saucepan and bring to a boil.
Boil for 1 or 2 minutes, depending on thickness of ginger slices.
Cover and store in refrigerator.
Keeps for several weeks.
