Festival Slaw - cooking recipe

Ingredients
    3 c. shredded cabbage
    1 c. shredded red cabbage
    1 c. shredded carrot
    1/4 c. finely chopped onion
    1/4 c. chopped dry roasted cashews
    1/4 c. white vinegar
    1/4 c. unsweetened pineapple juice
    1 Tbsp. Dijon mustard
    1/8 tsp. salt
    1/8 tsp. pepper
Preparation
    Combine cabbage, red cabbage, carrot, onion and cashews in a medium bowl; toss gently.
    Combine vinegar and remaining ingredients.
    Cover and chill thoroughly.
    Yield:
    8 servings (43 calories per 1/2 cup serving).
