Mandarin Orange Sweet Potato Salad - cooking recipe

Ingredients
    3 to 4 lb. sweet potatoes
    1 c. packed brown sugar
    1 1/2 Tbsp. cornstarch
    1/4 tsp. salt
    1 1/2 tsp. ground cinnamon
    1 c. apricot nectar
    2 tsp. grated orange peel
    2 Tbsp. liquid Butter Buds
    8 oz. can Mandarin oranges, drained
    1/2 c. Grape-Nuts cereal (a substitute for nuts)
Preparation
    Preheat oven to 350\u00b0.
    Boil potatoes in jackets and set aside. Combine sugar, cornstarch, salt and cinnamon in a saucepan.
    Add apricot nectar and orange rind.
    Bring to a boil, stirring constantly.
    Remove from heat.
    Stir in Butter Buds.
    Pour over sliced, peeled sweet potatoes and Mandarin oranges that have been placed in a casserole dish sprayed with a nonfat cooking spray. Sprinkle Grape-Nuts cereal on top.
    Bake for 25 minutes.
