Grits-Crispy Parmesan Squares - cooking recipe

4 c. water
1 c. grits
1/2 tsp. salt
1 1/2 c. Parmesan cheese
2 Tbsp. flour
1/2 tsp. pepper
1/2 tsp. seasoning salt
butter (for frying)
Preparation

In medium saucepan, bring salted water to boil.
Slowly stir in grits.
Cover; reduce heat and cook, stirring occasionally until liquid is absorbed.
Stir in 1 cup Parmesan cheese.
Spread this into 9 x 13 baking dish.
Cool until firm.
Cut into 2-inch squares.
In medium bowl, combine flour, seasoned salt, pepper and remaining Parmesan cheese.
Coat the grit squares on all sides until well coated.
Melt butter in skillet and fry grit squares until crispy on both sides.
