Vegetable Kugel - cooking recipe

Ingredients
    6 Tbsp. melted margarine
    1 c. chopped onion
    1/2 c. chopped celery
    1/2 c. grated raw carrot
    2 (10 oz.) pkg. chopped spinach
    3 eggs, beaten
    1 1/2 tsp. salt
    1/8 tsp. pepper
    3/4 c. matzo meal
    oil for frying
Preparation
    Saute onion, celery and carrot in oil for about 10 minutes, stirring occasionally.
    Cook spinach and drain.
    Combine vegetables.
    Add eggs, salt, pepper, melted margarine and matzo meal.
    Spoon into greased 1 1/2-quart baking dish.
    Bake at 350\u00b0 for about 45 minutes or until firm.
