Southern Grits Casserole - cooking recipe

Ingredients
    2 1/2 c. water
    1 c. quick cooking grits, uncooked
    3 Tbsp. butter or margarine
    1 1/2 tsp. salt
    1/2 tsp. pepper
    2 eggs, beaten
    1 1/2 c. shredded Cheddar cheese, divided
Preparation
    Microwave the
    water
    on
    High until boiling in a 1 1/2 quart casserole
    or
    use\tthe conventional range to boil.
    Add grits, butter, salt and pepper to the water.
    Cover with waxed paper. Microwave
    at
    High
    5
    minutes, stirring twice.
    Stir some of the hot grits into the beaten eggs.
    Stir in 1 cup of cheese and add egg-cheese mixture to grits.
    Stir well to mix. Microwave on
    High 5\tminutes.
    Rotate
    dish 1/2 turn after 2 minutes.
    Sprinkle the
    reserved
    1/2\tcup
    cheese
    on top of mixture.
    Cover. Microwave
    on High 2 minutes or until cheese melts.
    Let
    stand
    3 to 4 minutes before serving.
    Serve hot. Yield:
    6 to 8 servings.
