Hush Puppies - cooking recipe

Ingredients

2 c. cornmeal (self-rising)
1/2 c. pancake mix
2 1/2 tsp. sugar
1/2 c. diced onion
1 egg
1 c. buttermilk
2 Tbsp. vegetable oil
vegetable oil

Preparation

Combine first 4 ingredients in a medium bowl; stir well.
Add egg and next 2 ingredients and stir well.
Pour oil to depth of 2 or 3-inches into a Dutch oven.
Heat to 375\u00b0.
Carefully drop batter by rounded tablespoon into oil.
Cook only a few at a time. Cook until golden brown.
Serve immediately.
Yield:
about 4 dozen.
