Microwave Roux - cooking recipe

Ingredients
    1/2 c. oil
    1/2 c. flour
    1 c. chopped onions
    1/2 c. chopped celery
    1/4 c. chopped green onions
    1/4 c. chopped parsley
    6 cloves chopped garlic
Preparation
    In 4-cup glass measure, combine oil and flour; mix well. Microwave on High for 6 minutes or until as dark as desired. (Stir when there are 2 minutes left on the timer and when there are 30 seconds left on the timer.)
    Stir when timer counts to zero.
    If this is not dark enough for you, continue to microwave on High for 30 seconds.
    Add onions and celery.
    Mix well. Microwave on High for 3 to 4 minutes or until onions are soft but not brown.
    Add green onions, parsley and garlic.
    Microwave on High for 2 to 3 minutes or until done.
    Yields 1 batch roux.
