Cornbread Salad - cooking recipe

Ingredients
    1 pkg. Mexican cornbread mix
    1 small purple onion, chopped
    1/2 bell pepper, chopped
    1 can Mexicorn
    1 c. mayonnaise
    1/2 to 1 c. Cheddar cheese, grated
    2 or 3 tomatoes, chopped
Preparation
    Mix and bake cornbread according to directions.
    Let cool and crumble.
    Add all other ingredients and lightly toss.
    Chill and serve cold with crackers.
