Summer Vegetable Casserole - cooking recipe
Ingredients

2 Tbsp. butter
1/2 c. green pepper, diced
1/2 c. onion, diced
1 c. corn
1 c. zucchini, diced
1 c. fresh tomatoes, diced
3/4 c. bread crumbs
salt and pepper to taste
grated cheese (if desired)
Preparation

Melt butter.
Add vegetables and saute until tender (about 10 minutes).
Season with salt and pepper.
Pour into casserole dish.
Sprinkle with bread crumbs and grated cheese.
Bake at 350\u00b0 until cheese is melted and top light golden brown (15 to 20 minutes).
May be frozen by pouring into freeze wrap lined casserole dish.
Fold and seal freezer paper.
Freeze.
When frozen, remove from casserole dish and return to freezer immediately.
