Low Sodium Super Rice(Diabetic) - cooking recipe

Ingredients
    2 chicken bouillon cubes
    1 c. uncooked white rice
    1 c. plus 2 Tbsp. green peas
    artificial sweetener to equal 1 Tbsp. sugar
    1 large onion, diced fine
    1/2 c. sliced mushrooms
    2 Tbsp. salad oil
    1/2 tsp. parsley flakes
Preparation
    Dissolve 2 chicken bouillon cubes in 2 cups boiling water. Add rice; bring to a boil again.
    Cover; let simmer for 14 minutes.
    Cook peas, adding sweetener at the last minute.
    In a skillet, saute onion and mushrooms in oil.
    Add peas, onion and mushrooms to rice.
    Garnish with parsley.
    Yields 8 servings.
