Black Beans And Rice - cooking recipe

Ingredients
    1 (14 1/2 oz.) can chicken broth (not condensed)
    1/2 c. coconut
    1 Tbsp. margarine or butter
    1 c. uncooked long grain rice
    1 (15 oz.) can black beans, rinsed and drained
    1/2 c. sliced green onions
Preparation
    In a medium saucepan, combine broth, coconut and margarine. Bring to a boil.
    Stir in rice.
    Reduce heat.
    Cover and simmer 15 minutes. Stir in beans and onions.
    Cover and cook an additional 5 minutes or until liquid is absorbed.
    Makes 6 (2/3 cup) servings.
