Mexican Style Eggs - cooking recipe

Ingredients
    8 whole eggs
    4 egg whites
    1/2 tsp. salt
    1/4 tsp. black pepper
    2 Tbsp. butter
    1/2 c. finely chopped onion
    1 tomato, halved, seeded and diced
    2 jalapeno peppers, seeded and finely chopped
    1 Tbsp. chopped fresh cilantro
Preparation
    Whisk together eggs, egg whites, salt and pepper in a bowl. Heat butter in large nonstick skillet over medium heat.
    Add onion, tomato, jalapenos and cilantro.
    Saute 2 to 3 minutes until onion is clear.
    Add egg mixture to skillet.
    Cook, stirring, until desired consistency, 4 to 6 minutes.
    Makes 4 servings.
