Freezer Tomato Sauce - cooking recipe

Ingredients
    6 lb. plum tomatoes
    1 1/2 c. chopped onion
    1/2 c. chopped celery
    3 large cloves garlic, minced
    2 Tbsp. olive oil or cooking oil
    2 tsp. sugar
    1 to 2 tsp. salt
    1/2 tsp. pepper
    1 fresh red cayenne chili pepper, seeded and finely chopped (1/2 tsp.) or 1/8 tsp. ground red pepper (optional)
    2 Tbsp. snipped, fresh oregano or 2 tsp. dried oregano, crushed
    1 to 2 Tbsp. snipped fresh thyme or 1 to 2 tsp. dried thyme, crushed
Preparation
    In a large kettle,
    bring 4-inches of water to boiling. Immerse tomatoes in boiling water
    for
    1
    minute.\tDrain in a colander.
    Peel, seed and
    chop tomatoes.
    (You should have 10 cups.)
