Baked Lemon Catfish - cooking recipe

Ingredients
    4 catfish fillets
    1/2 c. melted oleo
    1/4 c. diced celery
    1/2 c. diced carrots
    1/4 c. chopped green onions
    1/3 c. lemon juice
    salt and pepper
Preparation
    Place fish on foil.
    In skillet, melt oleo and saute celery, carrots and onions.
    Spread over fish.
    Sprinkle with lemon juice, salt and pepper.
    Seal foil well.
    Place on cookie sheet and bake at 350\u00b0 for 20 or 25 minutes, depending on thickness of fish. Contains 322 calories, 26 grams fat, 14 grams carbohydrates, 106 mg cholesterol and 298 mg sodium.
