White Potato Medley - cooking recipe

Ingredients
    4 white potatoes
    1 large red bell pepper, diced
    1 medium size, yellow onion, diced
    2 cloves garlic, minced
    1/4 c. butter
    3 Tbsp. lemon juice (optional)
    lemon pepper
    salt
Preparation
    Dice potatoes and soak in salted, ice water for at least 20 minutes.
    In the meantime, saute the onion, bell pepper and garlic in the butter over low-medium heat for 20 minutes; don't brown. Drain the potatoes and add them to the onion and bell pepper; cook an additional 30 minutes or until potatoes are slightly browned and done.
    Salt and pepper to taste.
