Vicki'S Ginger Soy Chicken - cooking recipe

Ingredients
    2 1/2 to 3 lb. broiler, cut up (or thighs)
    1 Tbsp. cooking sherry
    1 large garlic clove, crushed
    1/2 c. lite soy sauce
    1/2 c. water
    1 tsp. ground ginger or 1/2 Tbsp. fresh, grated
    1 tsp. honey or sugar
Preparation
    Combine all
    sauce
    ingredients
    and pour over chicken. Bring slowly to
    a simmer.
    Cook 45 minutes or until fork-tender.
    (If sauce
    thickens too much, add more water.) Leftover sauce keeps indefinitely
    in glass jar, refrigerated.
    Serves 6.
