Skillet Vegetable Pork Chops - cooking recipe

Ingredients
    4 (3/4-inch) pork chops
    salt and pepper
    1 tsp. vegetable oil
    4 green pepper rings
    1 (16 oz.) can whole tomatoes, undrained
    1/2 c. uncooked quick cooking rice
Preparation
    Lightly sprinkle pork chops with salt and pepper.
    Heat oil in skillet over medium-high heat.
    Brown pork chops on both sides. Reduce heat.
    Drain tomatoes and add liquid to pork chops. Coarsely chop tomatoes and add to pork chops; stir in rice.
    Place a green pepper ring on each chop.
    Cover and simmer 40 to 45 minutes or until chops are tender.
    Yield: 4 servings.
