Welcome Home Frances Potluck Carrots - cooking recipe

Ingredients
    2 1/2 lb. carrots
    1/2 c. lite mayonnaise
    1 Tbsp. minced onion
    1 Tbsp. horseradish
    1/4 c. whole wheat bread crumbs and wheat germ, combined
    2 Tbsp. margarine
    salt and pepper to taste
    paprika
    chopped parsley
Preparation
    Using coarsest disk in food processor, chunk carrots.
    Add 1/4 cup water and cook in microwave on High 3 minutes or until tender-crisp.
    Stir carrots, cooking liquid and all, with the mayonnaise, onion, horseradish, salt and pepper.
    Pour into a 9 x 9-inch baking dish.
    Top with crumbs and dot with margarine. Sprinkle with parsley and paprika.
    Bake, uncovered, at 375\u00b0 for 30 minutes.
    Serves 6.
