Italian Corn And Rice Soup - cooking recipe

Ingredients
    1 (12 oz.) jar chunky salsa
    1 c. sodium-reduced tomato juice
    1/2 c. quick cooking brown rice
    1 Tbsp. dried minced onion
    1 tsp. Italian seasoning, crushed
    1/2 tsp. instant chicken bouillon granules
    1/8 tsp. dried minced garlic
    1/8 tsp. pepper
    1 (16 oz.) pkg. frozen zucchini, carrots, cauliflower, lima beans and Italian green beans
    1/2 c. shredded or grated Parmesan cheese (optional)
Preparation
    In a large saucepan, combine the salsa, tomato juice, brown rice, onion, seasonings and 2 cups of water.
    Bring to boiling. Reduce heat.
    Cover and simmer for 10 minutes.
