Sauteed Zucchini(Lo-Fat) - cooking recipe

Ingredients
    1 Tbsp. oil
    2 lb. zucchini, sliced into 1/2-inch rounds
    1/2 c. whole wheat bread crumbs, toasted
    2 Tbsp. minced almonds
    1 Tbsp. grated Parmesan
    1/4 c. fresh parsley, finely chopped
    1 Tbsp. freshly chopped oregano (1/2 tsp. dried)
    1 clove garlic, minced
    freshly ground pepper to taste
Preparation
    In nonstick skillet heat the oil over medium-high heat.
    Add zucchini and saute until just tender and slightly browned (5 to 8 minutes). Combine remaining ingredients and add to zucchini. Remove from heat. Toss gently and serve immediately.
    Serves 6.
