Eggplant En Casserole - cooking recipe
Ingredients

1 medium sized eggplant
6 Tbsp. butter
2 onions, sliced
3 tomatoes, peeled and diced or 1 1/2 c. canned
1 c. grated cheese or diced white American cheese
1 tsp. salt
dash of pepper
1 c. fine bread crumbs
Preparation

Slice eggplant 1/2-inch thick after removing skin.
Dice to make 5 cups.
Melt 3 tablespoons butter in skillet and saute the eggplant slowly for 5 minutes.
Place in casserole with alternate layers of sliced onions, diced tomatoes and cheese (saving 1/4 cup for to).
Season each layer.
Top with crumb which have been mixed with remaining cheese and dot with remaining butter.
Bake in oven at 375\u00b0 until vegetables are tender and surface nicely browned, about 35 to 40 minutes.
Makes 5 generous servings.
