Pickled Polish Sausage - cooking recipe

Ingredients
    approximately 3 lb. Polish sausage
    2 c. white vinegar
    2 c. water
    2 Tbsp. sugar
    2 tsp. salt
    1 tsp. peppercorn
    1 tsp. allspice
    1 small onion, chopped
Preparation
    Cut sausage into 2 to 3-inch pieces.
    Simmer 1 hour and drain and rinse.
    Combine remaining ingredients and bring to a boil. Simmer 10 minutes.
    Let cool.
    Pour this mixture over cooled sausage and some chopped onion in a large glass jar.
    Keep in refrigerator.
