Chicken Ring With Mushroom Sauce - cooking recipe
Ingredients

2 chickens, seasoned and cooked tender (about 4 lb. each)
4 c. soft bread crumbs
2 c. cooked rice
2 tsp. salt
1 tsp. paprika
1/2 c. chopped pimiento
6 well beaten eggs
1 qt. milk or chicken stock (half and half may be used)
1/2 c. butter or chicken fat
Preparation

Cut up chicken; combine ingredients in order given and mix well.
If stock is used in place of milk, use less salt.
Pack mixture in two generous sized buttered ring molds and bake in slow oven (325\u00b0) for 45 to 60 minutes.
Allow chicken rings to stand for 10 minutes or longer in a warm place (this insures easy removal), then turn onto two large platters and fill centers with mushroom sauce.
