Herb-Bran Muffins - cooking recipe
Ingredients

1 c. all-purpose flour
1/4 c. whole wheat flour
1 Tbsp. baking powder
1/4 tsp. salt
2 Tbsp. sugar
2 Tbsp. toasted sesame seed
1/4 tsp. dry mustard
1/2 tsp. herb of your choice (suggestions: sage, dill weed, oregano, sweet basil, parsley, marjoram, summer savory, rosemary, coriander or cardamom)
1 c. 100% bran cereal
1 c. skim milk
1 egg
2 Tbsp. melted butter or margarine
Preparation

Stir together the flours, baking powder, salt, sugar, sesame seed, dry mustard and herb of choice.
Set aside.
In a large mixing bowl, combine the bran cereal and the milk.
Let stand 2 minutes.
Add the egg and butter or margarine, blending well.
Add the flour mixture, stirring only until combined.
Coat a 12-muffin tin with nonstick cooking spray or line with muffin cups.
Fill each 2/3 full with muffin mixture.
Bake at 400\u00b0 for 18 to 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
