Shimmering Shrimp Mold - cooking recipe
Ingredients

2 (3 oz.) pkg. lemon or lime jello
2 tsp. salt
2 c. boiling water
1 c. cold water
4 tsp. vinegar
2 c. small cooked shrimp or use diced, cooked ham or turkey
1/2 c. diced celery
2 Tbsp. chopped pimiento
1 c. sour cream or yogurt
1 Tbsp. chopped parsley
1 Tbsp. chopped onion
1 tsp. curry powder (optional)
Preparation

Dissolve jello and salt in boiling water.
Add cold water and vinegar; chill until thickened.
Add 1 1/2 cups shrimp, celery, pimiento and 1 1/2 cups jello.
Spoon into 6-cup ring mold.
Chill until set, but not firm.
Add sour cream, parsley, onion and curry to remaining jello.
Spoon into mold.
Chill until firm, about 4 hours.
Unmold and serve with salad greens, if desired.
Garnish with remaining shrimp.
