Navy Bean Soup - cooking recipe

Ingredients
    4 lb. navy beans
    water
    5 bunches green onions, finely chopped (both green and white portions)
    1 c. pimento, finely diced
    3 lb. cooked ham, thinly sliced and very finely diced
    salt to taste
    pepper to taste
    Beau Monde seasoning to taste
Preparation
    Wash beans.
    Place beans in 15-quart pot with water to just cover.
    Boil the beans until very tender and soupy, adding water as needed, for approximately 4 hours.
    Add remaining ingredients. Simmer for 1 hour.
    May be frozen.
    Makes 12 quarts.
