Split Pea Soup(Debbie Hates Peas, But This Soup Is Very Tasty.) - cooking recipe

Ingredients
    2 c. split peas
    1 ham bone or 1 1/2 lb. salt pork
    3 celery tops
    1/2 c. milk (if needed)
    3 qt. or more cold water
    1 large onion, diced
    1 sprig parsley
Preparation
    Soak peas overnight in water.
    In a large kettle, boil, for 30 minutes, all of the ingredients.
    Turn burner to simmer and cook until peas are soft (4 to 5 hours).
    Dilute with water or milk if mixture becomes thick.
    Season to taste.
    Serves 8 to 10.
