Pickled Beets - cooking recipe

Ingredients
    4 qt. small beets
    3 c. vinegar
    2 c. water
    2 1/2 c. sugar
    2 tsp. allspice
    3-inch sticks whole cinnamon
    1/2 tsp. whole cloves
    1 tsp. salt
Preparation
    Cook the beets until tender.
    Slip off skins.
    Combine vinegar, water, sugar, spices and salt.
    Bring to a boil and simmer 15 minutes.
    Add the beets and simmer 5 minutes longer. Pack the beets into (hot) sterilized jars.
    If not enough liquid to cover beets, add hot vinegar.
    Seal immediately.
    Makes about 4 quarts.
