Chicken Monterey - cooking recipe

Ingredients
    4 large split chicken breasts
    1 (8 oz.) brick monterey jack cheese, grated
    1 large yellow pepper, sliced
    1 large red pepper, sliced
    1 medium onion, sliced
    1/4 c. butter
Preparation
    Melt butter in skillet.
    Brown chicken in butter, remove from skillet and set aside.
    Saute onion and peppers in butter until semi-tender and remove from skillet.
    Return chicken to skillet, add onions and peppers, cover and simmer until chicken is done. Add cheese to skillet, cover and continue to simmer just long enough to melt cheese.
    May be served with Mexican-style rice.
