Hot Chicken Salad - cooking recipe

Ingredients
    4 c. cooked chicken, cubed
    2 c. celery, diced
    4 hard-boiled eggs
    1 1/2 c. mayonnaise
    1 tsp. salt
    2 Tbsp. lemon juice
    1 Tbsp. onion juice (may omit)
    2 pimentos, cut fine
    1 c. Cheddar cheese, grated
    1 1/2 c. potato chips, crumbled
Preparation
    Combine mayonnaise, salt, lemon juice, onion juice and pimentos.
    Add chicken, celery and hard-boiled eggs; stir gently to coat.
    Pour into lightly greased 13 x 9-inch pan.
    Top with grated Cheddar cheese and then top with crumbled potato chips.
    Bake at 350\u00b0 for 35 to 40 minutes.
    Yield:
    8 servings.
    Excellent when served with spiced peaches and soft rolls.
    Spice peaches with sprinkles of one or more of your favorite spices, cinnamon, nutmeg, ginger, cloves, etc.
