Calico Bean Soup - cooking recipe

Ingredients
    2 c. (16 oz.) assorted dry beans
    8 c. water
    1 1/4 lb. ham hocks
    1 (28 oz.) can whole tomatoes, undrained and cut up
    1 c. chopped onion
    1/2 c. chopped carrots
    1 tsp. chili powder
    1/2 tsp. salt
    1/4 tsp. pepper
    1 lemon slice (1/2-inch thick)
Preparation
    Soak beans for 12 hours.
    Drain beans; add 8 cups water and ham hocks.
    Bring to a boil.
    Reduce heat; cover and simmer 3 hours.
    Add tomatoes, onions, carrots, chili powder, salt, pepper and lemon.
    Bring to a boil.
    Reduce heat; simmer 30 minutes. Remove bones from soup; cut meat from bones.
    Return meat to soup. Remove and discard lemon slice.
    Makes 10 (1 1/4 cup) servings.
