Herbed Potatoes - cooking recipe
Ingredients

4 medium size baking potatoes, cut into 1/4-inch slices (1 1/2 lb.)
2 medium size white onions, cut into 1/4-inch slices (12 oz.)
5 plum tomatoes, sliced (1 lb.)
1/2 tsp. salt
1 tsp. dry thyme
3/4 tsp. rosemary, crushed
1 Tbsp. olive oil
2 Tbsp. parsley
Preparation

Coat large baking dish with cooking spray.
Layer half each of potatoes, onion and tomatoes in dish; sprinkle with half of salt, thyme and rosemary.
Repeat layers and drizzle with the olive oil. Cover and bake at 425\u00b0 for 35 to 40 minutes or tender.
Sprinkle with parsley.
(If no fresh parsley, sprinkle with 1 tablespoon dry crushed before baking.)
