Jellied Confetti Slaw - cooking recipe

Ingredients
    6 c. thinly shredded green cabbage
    2 c. water
    3 envelopes unflavored gelatin
    2/3 c. granulated sugar
    1 tsp. salt
    1 c. fresh lemon juice
    1 c. shredded carrots
    1/3 c. each: diced celery, red bell pepper and yellow bell pepper
    3 Tbsp. chopped scallions
    1 Tbsp. dill
Preparation
    Cook cabbage for 2 minutes in a large pot of boiling water. Drain under cold water.
    While cabbage cooks, put the 2 cups of water in saucepan.
    Sprinkle gelatin over top and let stand for 1 minute.
    Place over low heat and stir 3 minutes or until liquid is almost simmering, gelatin granules are completely dissolved and mixture is clear.
    Remove from heat and stir in sugar until dissolved.
    Stir in lemon juice.
