Tomato Tortellini Soup - cooking recipe
Ingredients

1 Tbsp. plus 1 tsp. olive oil
1 c. chopped carrot
1/2 c. chopped onion
2 garlic cloves, minced
1 tsp. dried basil
1 tsp. dried oregano
1 bay leaf
4 c. canned tomatoes (in thick puree), chopped
2 c. low-sodium chicken broth
2 c. cheese tortellini
2 c. chopped fresh spinach
Preparation

In a large saucepan, heat oil. Add carrot, onion and garlic. Cook, stirring frequently, 4 to 5 minutes. Stir in basil, oregano and bay leaf. Cook 1 minute longer. Stir in tomatoes, broth and 2 cups water. Simmer 15 minutes.
