Moo Goo Gai Pan - cooking recipe

Ingredients
    1 large whole chicken breast, skinned and boned
    5 tsp. cornstarch
    2 Tbsp. and 1 tsp. water
    1 Tbsp. dry sherry or Shao Hsing wine
    salt to taste
    1/4 tsp. ground white pepper
    1 lb. button mushrooms or 3/4 to 1 c. drained canned mushrooms
    1 c. chicken broth *
    1 c. oil
    1/3 c. bamboo shoots, thinly sliced
    3/4 c. celery cabbage stalk only, cut into 3-inch lengths
    1/2 tsp. sugar
    1 Tbsp. canola oil
    15 oz. can straw mushrooms
Preparation
    *If the button mushrooms are used, additional broth will be needed to cover and simmer them.
