Baked Rice Pudding - cooking recipe

Ingredients
    3 beaten eggs
    2 c. milk
    1/2 c. sugar
    1 tsp. vanilla
    1/2 tsp. salt
    1 3/4 to 2 c. cooked or leftover rice
    1/3 to 1/2 c. raisins (optional)
    ground nutmeg
Preparation
    Combine eggs, milk, sugar, vanilla and salt. Mix well. Add rice and raisins.
    Pour into 10 x 6 x 1 3/4-inch baking dish. Bake, uncovered, at 325\u00b0 for 30 minutes. Stir.
    Sprinkle with nutmeg.
    Bake until knife inserted halfway between center and edge comes out clean, about 30 minutes more.
    Serves 6.
