Coconut Pancakes - cooking recipe

Ingredients
    1 egg, beaten
    1 c. sour cream
    1 c. buttermilk
    1 c. flour, sifted
    1 tsp. soda
    1 tsp. baking powder
    1/2 tsp. salt
    1 Tbsp. sugar
    1 c. Angel Flake coconut
    1 tsp. coconut extract
Preparation
    Combine egg, sour cream and buttermilk.
    Sift together the flour, soda, baking powder, salt and sugar.
    Add dry ingredients to liquids.
    Mix until batter is lumpy; add coconut and extract but don't overbeat.
    Spoon batter onto hot griddle.
    When done, place on plate and sprinkle with flaked coconut.
    Serve with cream of coconut (takes the place of syrup).
    Makes 8 to 10 pancakes.
