Zucchini Casserole - cooking recipe
Ingredients

1 large zucchini or any type squash, sliced
1 large onion, chopped
3 large tomatoes, diced
1 Tbsp. olive oil
1 c. whole kernel corn (fresh or canned)
salt and pepper to taste
garlic salt to taste
shredded Cheddar cheese
Preparation
-
Saute zucchini, onion and tomatoes in olive oil.
Add corn, salt, pepper and garlic salt.
Cover with shredded Cheddar cheese. Cover with lid and simmer for 20 minutes.
