H.R.E.S. Cafeteria Rolls - cooking recipe
Ingredients

1/4 c. instant yeast
3 lb. flour (plain)
1 3/4 c. warm skim milk
3/4 c. vegetable oil or softened vegetable shortening
3/4 c. sugar (1/2 c. for less sweet rolls)
1 tsp. salt
Preparation

Have all ingredients at room temperature.
Mix all dry ingredients in mixer bowl using dough hook.
Blend well.
Mix oil and 1 cup of water and pour into the dry ingredients and blend. Add warm water until dough is wet, but stiff.
Mix on high until dough leaves sides of bowl.
Cover bowl and let dough rise to double in size.
Punch down and knead 2 to 3 minutes.
Form rolls by pinching off 2-ounce pieces.
Place on lightly oiled baking sheet.
Let rise until doubled in size.
Bake at 400\u00b0 for 20 to 25 minutes, until lightly browned.
