Diet Pickles - cooking recipe

Ingredients
    10 lb. medium size cucumbers
    1 c. salt
    1/4 c. mixed pickle spices
    2 1/4 qt. vinegar
    2 Tbsp. sugar substitute
Preparation
    Wash and cut cucumbers into slices about 1/4-inch thick.
    Mix cucumbers and salt.
    Let stand overnight.
    In the morning, drain and press out all the juice possible. Rinse once in cold water. Combine vinegar, sugar substitute and spices. Boil 1 minute. Add cucumbers and simmer 5 minutes.
    Pack cucumbers into clean, hot sterile jars to within 1-inch of top. Fill jars with hot liquid to top.
    Seal tightly.
    Makes about 12 pints.

    46 calories per pint.
