Ingredients

2 lb. lima beans
1/2 white onion, diced
salt and pepper to taste
2 ham shanks, split in three pieces
1 gal. hot water
Preparation

Pick, clean and wash
beans.
Put
in
Dutch oven large enough to hold
all
ingredients.\tPlace remaining ingredients in oven and let simmer for 4 hours, adding water as needed.
